At The Elysian, we pride ourselves not only on the confines of our setting but additionally in our people. Our recognition has been achieved exclusively on the initiatives of our staff and with great staff we can accomplish excellent things!
One of the particular ‘flavors’ of The Elysian is Chef Banjar who can be found on most days in the Rush Bamboo Restaurant serving up rich cuisine.
The first issue which will strike you regarding Chef Banjar is his easy going demeanor, but then again, Chef is Balinese and this is a typical trait among Balinese. Chef Banjar has a penchant for food and came to our Private Bali Villa once honing his expertise in the Hilton and as Sous Chef for the Sofitel. But beyond that, Chef has completed Tourism, Luxury, Communication, Corporate and Food Safety training.
Quite apart from his technical expertise, Chef genuinely likes taking local cuisine, enhancing the flavors and enriching the total presentation. To this extent, the artistically talented Balinese can make the easiest of foods to appear as culinary masterpieces. A great illustration of Chef’s expertise can be sampled in the Megibung dinner.
It is accurate that attractiveness lies in the straightforward details in life and Megibung is a Balinese tradition of sharing. Chef Banjar has been able to consider this simple fact and then enhance the flavors and to further stimulate the senses. The meal is served in the privacy of the poolside cabanas while enjoying Balinese cultural dance. The ambience is heightened as well as the flavor of the evening.
This is but one illustration of Chef’s endeavors in the kitchen. Unique pride goes into preparing local delights with a heightened feeling of appeal. Recently Chef Banjar introduced an additional local dessert and went to great lengths to build the serving bowl in the time honored traditional manner. This entailed making the bowl absolutely form banana leaves. This is labour intensive but very well worth the work as a lot of guests have never seen such a creation.
The attention to detail is what sets Chef Banjar aside. Western cuisine undergoe a similar scrutiny, though local meals with the Chef Banjar touch seem to be a lot more in keeping with a visit to a top Bali restaurant. We highly recommend that you sit in the open air pavilion for a sumptuous Megibung dinner and be mesmerized by the style and elegance of the Balinese dance – or merely order any one of Chef’s particular creations.
