Summer Holiday Barbecue Party Recipes
By: Peter Weston

Many party hosts are looking for easy barbecue recipe ideas. After all, most people don’t want to serve the same thing at their summer cookout, year after year. While some of the traditional barbecue cuisine should certainly be included annually, here are some new ideas for you to try at this year’s party.

Watergate Salad

1) 16 oz can of pineapple (crushed)1) 4 oz box of Jell-O™ pudding (Pistachio)1) 8 oz tub Cool Whip 1) 16 oz of bag miniature marshmallowsMaraschino cherries (your choice to include or not)Coconut (your choice to include or not)

Drain juice from pineapple. Mix all ingredients in a bowl making certain to mix well. The salad is best if left in refrigerator overnight. Some people like the Watergate Salad with cherries and coconut—that is up to the individual taste. The recipe can be doubled for larger crowds, but a single recipe will feed approximately ten people.

Homemade Pasta Salad for Healthy Eating

If you love pasta salad but aren’t sure the store-made type you can simply pick up at the grocery store will work with your current healthy eating plan, making your own is the perfect option. After all, when you make your own you can add exactly what you like and take out the things you don’t care for at all. Adjust this recipe to fit your personal diet needs and desires. If you’d like, you can also add pepperoni to it.

Almost Homemade BBQ Party Baked Beans

1 drained can (46 oz) of Pork & BeansBrown sugar (simply substitute Splenda™ Brown Sugar for less calories)Optional: Chopped OnionHoney (to help with desired thickness)Yellow Mustard, Catsup or BBQ for spicy flavorEnough bacon strips to cover the top of the pan

Start by mixing all of the ingredients (minus the bacon) in a baking dish. Place the uncooked bacon strips on top of the mixture, until the pan is covered. Bake the recipe at 400 degrees for about 45 minutes or until the bacon is crisp and well done. This recipe will serve 10 guests and can easily be changed for more or fewer people.
